Super Easy Healthy Cookies
Whenever I post a picture of these homemade cookies I get a ton of requests to share the recipe with you. I've decided to post it today because Sunday is the perfect excuse to bake plus sharing is caring, right? :-)
I do my best to eat healthily most of the time (I have cheat days once in a while) but I have a sweet tooth so I need to come up with healthy ideas to satisfy my cravings. I've tried many recipes (some were hits, some were big fails) but these cookies are the best ones I've made so far. They are ridiculously easy to prepare, they literally take 15 minutes from start to finish and oh my they are amazing!
Here is the recipe. Well... I don't even know if we can call this a 'recipe' as it's so easy!
What you need (for approximately 15 cookies)
2 cups of almond powder
1/3 cup of honey (maple syrup works great too if you are vegan)
1 1/2 table spoons of melted coconut oil
1 teaspoon of vanilla extract
1/2 teaspoon of baking soda
1/8 teaspoon of pink himalayan salt
Mix all the ingredients together. You don't need any fancy equipment, it mixes very easily with a spoon or even a fork. Roll the mixture into small balls. Lay them on a tray covered with baking paper and press slightly to give them your desired shape. Let them bake at 180 degrees Celsius for about 8 minutes. Don't let them any longer than that, they tend to continue baking for a couple of minutes after you've taken them out of the oven. Let them cool down and enjoy with a cup of coffee or tea!
See... who said cookies can't be healthy? No refined sugar, no dairy, no gluten. You can enjoy them without feeling guilty.
