Lemon Coconut Bliss Balls
As promised today on Instagram I’m sharing the recipe (if we can even call that a recipe!) of these delicious lemon and coconut bliss balls.
I have no credit for them, I found the recipe on Pinterest! By the way, I’ve been rekindling my love for Pinterest lately… I find it way more inspiring than Instagram. You can follow me here if you feel like it! :-)
I always like to prepare a batch of some kind of healthy treats for the week ahead. It helps me staying back on track with my healthy eating without feeling deprived. At the end of the day there is a reason why they are called ‘bliss balls’! They are probably my most favourite healthy treats ever.
They are super quick to prepare and you can keep them in the fridge for a few days. They are great when you are on the go, after a good workout or with a cup of coffee mid-afternoon! I also like to pack a couple of them in Amélie’s lunch box when she goes to the nursery. She absolutely loves them! (Be careful obviously and make sure your children are not allergic to nuts).
The only limit is your imagination of course… but this combination is one of my favorites so far. The lemon combined with the sweetness of the dates tastes heavenly!
To make them you will only need 4 ingredients:
One cup of pitted medjool dates
One cup of almonds
1/4 cup of grated coconut
The juice and zest of one lemon
They are pretty straight forward to make. Place all the ingredients in your blender (except for the coconut) and blitz until everything bounds together and forms a nice thick paste. Take large teaspoons of the mixture and roll into bite-size balls. Once you are done roll them into the grated coconut and put them in the fridge, they taste even better when they are cold!
Bliss balls are packed with fibers, minerals and vitamins. They are a great way to add seeds and nuts into your diet. Their natural sugar will satisfy your sweet cravings for sure.
